Dr. Kirsty Spalding and colleagues of the Karolinska Institute in Sweden (2008) found that when they tested patients whom had lost weight (even in huge amounts) they had little changes in their fat cells count. This may contradict many scientists whom believe that reducing weight is a result of burning body's fat cells. However, I think that Dr. Spalding finding is more logic especially in explaining why it is so difficult for people to lose weight quickly and to keep it off.
The new research confirmed the theory supported by many scientists that the total number of the body's fat cells remains constant after adolescence, regardless of losing or gaining weight after puberty. Although, we lose around 10% of our fat cell count per year, but in the meantime this loss is replaced by the same amount of newly produced fat cells, so the number of fat cells remains constant. This means that under no circumstances the seriousness of dieting will alter the number of fat cells in our bodies. I believe that is why gradual and slowly changes in dieting behavior is more effective for long-term weight loss.
Based on that, when we overeat, our fat cells expand in size, and that is why we get fatter.
