Delicias Restaurant introduces Rick Hyra as Sous Chef

Rancho Santa Fe, CA – Rick Hyra, 28, has come to Rancho Santa Fe to join Delicias Restaurant as their new Sous Chef. A 2003 graduate of the Culinary Institute of America, Hyra hails most recently as one of Gordon Ramsey´s Sous Chefs at The London in West Hollywood. Prior, he spent two and a half years at Santa Monica´s La Cachette under French Master Chef Jean Francois Meteigner. Five years in Boston gave him experience with innovative contemporary leader Executive Chef Eric Brennan at Excelsior and Harvest.

Working in close proximity to Chino Farms has given Hyra the opportunity to create fresh, seasonal dishes using the abundant variety of vegetables and fruits. Rancho Santa Fe´s coastal location also affords him excellent seafood options. "I like the straight-forward approach of Executive Chef Michael Knowles´ farm to table concept and I´m thrilled to be working alongside him," says Hyra.

The youngest of two boys, Hyra has been cooking since the age of 14. Some of his favorite meals to prepare are traditional bistro-style meals as well as Southern comfort food. On occasion, he treats the Delicias staff to his classic fried chicken and biscuits. When he´s not in the kitchen, he enjoys golfing, hiking, sky diving, cooking for his friends and traveling. His ultimate goal is to move to France to perfect his skills under Michelin-star chefs and eventually open his own bistro.

The Tuscan-style setting of Delicias Restaurant complements the excellent food and wine served, creating an unparalleled dining experience in the heart of Rancho Santa Fe. The main dining room, courtyard, and patio all offer fire side dining.
